PROBLEM TO BE SOLVED: To obtain an auxiliary food ingredient capable of improving a nutritive value of a food better than that of unpolished rice without spoiling taste and flavor of the food and the food incorporated with the auxiliary food ingredient. SOLUTION: This auxiliary food ingredient contains γ-aminolactic acid which forms a salt with an acid having <=4.4 pKa acid dissociation constant. The auxiliary food ingredient is added to rice grain-like food, noodle-like food and the like to improve the nutritive value of the foods. |
