The cutter (3) is made with a back-off clearance (1) and a concave profile (2) relative to its cross section. The cutter is only hardened along the cutting edge (4), sufficiently to allow a sharpening reserve (5), reducing friction between the meat and the side surfaces (6, 7), so that less heat is created and little cooling is required.
