PURPOSE: Provided is a process for preparing frying noodles using a reduced pressure mixer, thereby preparing frying noodle which have elastic texture and, transparent and smooth noodle strips without popping, and gives good mouth feeling. CONSTITUTION: The process for preparing frying noodles using a reduced mixer is comprises the steps of: mixing flour and water, characteristically using a reduced mixer of 1-360 mmHg to prepare kneadings each for an inner layer and an outer layer, wherein 35-50(vol/wt)% of cold water is used referred to the flour; forming them into a flat shape; rolling them to form a three layered kneading consisting of an outer layer/an inner layer/an outer layer sequentially; and followed by rolling, forming a noodle strips, and frying and cooling them. |
