PROBLEM TO BE SOLVED: To provide a method and an apparatus for the detection of a moisture quantity in a specimen, wherein a part with the lowered moisture quantity at the inside of the specimen can be detected precisely and surely without damaging the specimen or without spoiling its quantity. SOLUTION: An orange A is irradiated with soft X-rays B generated by a radiation irradiation device 11, and the soft X-rays B which are transmitted through the orange A are detected by detectors 12a to 12c in a radiation detection device 12. A CPU 20 judges whether the inside of the orange A includes a pithy part Aa or not on the basis of detection information to be output from the device 12. The orange A which is judged to be void of the pithy part is sorted and treated on the basis of a judgment result. The orange A which is judged to be inclusive of the pithy part is recovered and treated as outside of a standard.
