PURPOSE: To obtain bread crumb extremely little in the oil-absorbing capacity on frying, excellent in shape and texture, and useful for health, etc., by rolling bread blocks and subsequently pulverizing the rolled bread blocks. CONSTITUTION: A baked bread block is sliced into pieces each having a desired thickness. The sliced surfaces of the pieces are rolled with rolls in a roll gap/ bread block thickness (roll pressure ratio) of 0.06-0.15, and subsequently pulverized to obtain the objective bread crumb. The rolled and pulverized bread crumb has preferably an apparent specific gravity of 0.20-0.35. |
