PURPOSE: Provided is a manufacturing method of bean curd using a lecithin emulsion as a defoaming agent. Therefore, active ingredients of lecithin having various functions can be expressed and an excellent defoaming effect is created. CONSTITUTION: The manufacturing method of bean curd comprises the steps of: dipping soybeans in water then crushing them to obtain soy milk; removing foams therefrom; and heating the soy milk with adding a coagulating agent thereto, wherein 10-20% of a lecithin emulsion is characteristically used as a defoaming agent. The lecithin emulsion is prepared by adding water to lecithin, and homogenizing the mixture at 1000-18000rpm for 2-5 minutes.
