PURPOSE: Provided is a method for manufacturing coffee noodles and coffee rice cake using coffee as a soup for them. CONSTITUTION: The manufacture method of coffee noodles and coffee rice cake comprises the steps of: washing 600gof normal rice and soaking them in water for 2 hours; steaming them with steam of 110 deg.C for 40-45 minutes; sprinkling 60-80g of coffee solution added with 3-4% of oligosaccharides and 0.2-0.5% of dietary salts, at 90 deg. C; steaming them at 70 deg.C and forming noodle strips of rice cake with them using a molding machine; adding a mixture of 20-25 part by wight of coffee, 2 part by weight of roasted soybeans, 20-25 part by weight of hard boiled glutinous rice, and 20-25 part by weight of hard boiled normal rice to the steamed rice with the coffee solution; and vacuum packing them.
