The machine consists of a mincer producing a layer (V) of minced meat with a width determined by the size of the portions to be made, an endless belt conveyor (T), a cutter to divide the layer of meat into portions, and lateral (5) and vertical (6) shapers to give each portion the required shape and thickness. The lateral shapers are in the form of recessed blocks that travel symmetrically on each side of and immediately above a shaping conveyor (11) that forms part of the endless conveyor belt system. The blocks, fitted in transverse sliders on endless lateral chains, touch as they move along, forming cells that shape the meat portions, while the vertical shapers in the form of pushers are mounted on a third endless conveyor (2C) positioned above the shaping conveyor and co-operate with the lateral shaping blocks, moving synchronously with them.
