<p>The identification of a new key enzyme in vitamin C synthesis, and its use to modulate vitamin C synthesis in eukaryotic cells are disclosed. Specifically, the isolation of a multimeric GDP-mannose-3',5'-epimerase, the identification, cloning and expression of a nucleic acid sequence encoding GDP-mannose-3',5'-epimerase, methods of producing GDP-mannose-3',5'-epimerase, transgenic plants and microorganisms that express the GDP-mannose-3',5'-epimerase, and methods of production of ascorbic acid using the GDP-mannose-3',5'-epimerase are disclosed.</p> |
