摘要

PROBLEM TO BE SOLVED: To obtain a new α-mannosidase having stronger enzyme activity than that of conventionally well-known α-mannosidase, acting in near neutral region and capable of easily cutting out mannoses from a glycoprotein sugar chain having mannose-1-phosphate bond of yeast. SOLUTION: The α-mannosidase having optimum pH at 6-9.5 and the α- mannosidase-containing fraction characterized by containing the α-mannosidase and substantially without containing end-α-mannosidase, β-mannosidase or end-β- N-acetylglucosaminidase are provided.
