Use of chicory flour to produce bread, viennoiserie or biscuit dough

Flour produced by milling dried chicory roots is used to produce bread, viennoiserie or biscuit dough. An Independent claim is also included for a process for producing a food product, in which a bread, viennoiserie or biscuit dough made from the above flour is kneaded, optionally allowed to rise, and cooked at a temperature above 150 deg C.
