FIELD: production of additives for meat and canned goods industries; applicable for producing meat and meat-and-vegetable products. SUBSTANCE: according to the 1st version, food additive contains gum of carob tree, xanthane gum, carrageenan, dextrose of potassium chloride at determined ratio of components. According to the 2nd version, food additive contains gum of carob tree, guarani gum, carrageenan, dextrose of potassium chloride at determined ratio of components. According to both versions, food additive is introduced in meat product in dry form in amount of 0.2-0.7% per 100 kg of meat raw material at mixing of ingredients at production of sausages, meat or meat-and-vegetable canned goods, or in brine for forcing at production of neck, carbonate, ham or whole-muscular products from meat. Said food additive is multifunctional and universal for above- mentioned assortment of meat products and canned goods. The food additive provides high quality of final product without conserving agents at disturbance of temperature regime at storage, at temperatures drops in process of products transportation, and also at disturbance of airtightness of packing.
