The installation records, on a first medium, initial time and temperature parameters of the foodstuff, and records on a second medium a second set of data taken during processing, storage and transport. The two sets of data are recorded on a central database (17), which, at the final acquisition of the foodstuff, provides the end user (20) with a ticket (19) carrying the two sets of data.
