PROBLEM TO BE SOLVED: To provide a protein/saccharide conjugated composition excellent in various functions such as flavor, palatability, taste, emulsifiability and water retainability and very useful for foods, cosmetics, medicines, chemicals and the like. SOLUTION: This protein/saccharide conjugated composition is obtained by conjugating a protein with a saccharide, wherein, as the protein, the potassium salt of a protein especially the potassium salt of casein is used. |
