PROBLEM TO BE SOLVED: To provide a continuous freeze concentration method for an aqueous solution containing a flavor component, greatly reducing investment cost in plant and equipment and also size of equipment, capable of easily continuously subjecting an aqueous solution of single kind and large capacity, and various kinds and small lot to a freeze concentration in an arbitrary amount and supplying the aqueous solution as a flavor material of various processed foods. SOLUTION: This continuous freeze concentration method for an aqueous solution comprises such processes that nitrogen gas or air is mixed at a constant rate with a flavor component-containing aqueous solution to be concentrated followed by making the resultant product whipped, the resultant whipped solution is continuously transported to the inside of a cylinder with a wall cooled at -0 deg.C to 4 deg.C to freeze from pure water in an instant, the whipped solution frozen inside the cylinder is scraped with a scraping device followed by continuously discharging the sherbet-like solution outside the cylinder and the thus obtained product where a frozen fine pure ice part and a concentrated liquid are mixed together is continuously separated into an ice part and a concentration liquid. |
