PROBLEM TO BE SOLVED: To provide a β-glucosidase expected for improving a flavor in a field of a food production, especially in the production of a wine, and a DNA encoding the same. SOLUTION: This β-glucosidase excellent in glucose resistance is obtained by culturing a Y-44 strain belonging to the genus Debaryomyces, designing a primer based on an inner amino acid sequence of the obtained p-glucosidase excellent in glucose resistance and performing a PCR reaction by using the genome DNA of the Y-44 strain as a mold. The amplified DNA is used as a probe, and the DNA encoding the objective β-glucosidase is obtained from the Y-44 strain genome DNA library prepared separately. |
