PROBLEM TO BE SOLVED: To improve productivity of a fryer through decreasing a stand-by time of a worker until a series of preparation is finished by restraining deterioration of cooking oil through decreasing temperature irregularity of the gas fryer and by curtailing a resetting time at batch operation. SOLUTION: The gas fryer is provided with an immersed pipe 21 provided so as to be immersed in the cooking oil in an approximately middle part inside an oil tank 29, a combustion chamber 26 provided on a combustion gas inlet side of the immersed pipe 21 and a flue 27 provided on a combustion gas outlet side of the immersed pipe 21, wherein the gas fryer is provide with a sleeve 23 with thermal insulation so that an inside wall of the combustion gas inlet side of the immersed pipe 21 is directly not caught by combustion gas flare and a screw mixer 22 with thermal insulation provided inside the immersed pipe 21. In addition, an entrance guide 24 for introducing the combustion gas into a combustion gas inlet of the immersed pipe 21 and a member 25 for providing the oil tank with thermal insulation from the combustion chamber for the vicinity of the combustion gas inlet of the immersed pipe 21 so as not to be overheated are provided.
