PROBLEM TO BE SOLVED: To provide high-concentration of bean curd having nice appearance, capable of being uniformly coagulated, and also capable of giving an eater smooth palate feeling because of containing no air bubbles in the tissue thereof, and to provide a method for producing the bean curd. SOLUTION: This high-concentration bean curd is such that high-concentration soybean milk with Brix sugar-content degree of >=16 is used, and air bubbles are almost perfectly eliminated from tissues. The method for producing the bean curd comprises the step of adding a coagulant to high-concentration soybean milk to coagulate protein therein; wherein the high-concentration soybean milk is subjected to degas after and/or before addition of the coagulant. |
