PROBLEM TO BE SOLVED: To provide a coated organic acid preparation for storing bakery products, capable of storing the bakery products for a long period without having influence on volume, appearance, taste and smell of products after baking and freezing. SOLUTION: This invention provides a coated organic acid preparation, used for storing bakery products (excluding products produced by fermentation with yeast), obtained by coating an organic acid with a coating agent having 64-98 deg.C melting point. |
