PROBLEM TO BE SOLVED: To provide a food having sweet potato as an ingredient and uniform flavor and palate feeling, and also to provide a method for industrially producing the food. SOLUTION: This bite-sized food is prepared from sweet potatoes and uniform in flavor and palate feeling peculiar to sweet potato. The other objective method for producing the food comprises (i) a process of heating sweet potatoes, cutting them as they are in a high temperature condition to a given size followed by peeling them, (ii) a process of mixing the peeled sweet potatoes with an auxiliary material followed by kneading the resultant product, (iii) a process of forming and baking the kneaded ingredient, (iv) a process of regulating the moisture of the baked formed product and (v) a process of rapidly freezing the formed product with regulated moisture. It is preferable that the food is a product of a retort food form. |
