PURPOSE: Provided is a method for producing honey syrup drink by lactic acid fermentation using lactic acid bacteria, thereby producing the high quality of fermented honey syrup drink. CONSTITUTION: The method for producing honey syrup drink comprises the steps of: (1) diluting natural honey syrup up to 10 Brix, sterilizing then cooling the diluted honey syrup solution; (2) inoculating Lactic acid bacterium CD-02 into the diluted honey syrup solution and fermenting it; (3) finishing the fermentation when the lactic acid concentration in the fermented honey syrup solution is 3%, cooling the fermented honey syrup solution, recovering the supernatant, inserting the supernatant into a vessel, and sterilizing it; and (4) adding a small amount of citric acid and other flavoring component into the fermented honey syrup solution.
