Oil-in-water microemulsions comprise a triglycerine monofatty acid ester (I) as emulsifier and a lipophilic inner phase selected from carotenoid substances, especially beta -carotene, Vitamins A, D, E and K and their derivatives, and polyunsaturated fatty acids such as arachidonic acid, eicosapentaenoic acid and docosahexaenoic acid. |
