摘要 Coated organic acid preparations for preserving bakery products (excluding those produced by yeast fermentation) wherein an organic acid is coated with a coating having a melting point of 64 to 98°C. By adding the coated organic acid preparations to dough, bakery products having excellent preservation properties can be obtained without affecting the volume, appearance, taste and smell of the baked products.
