PURPOSE: Provided are a manufacturing process and a manufacturing device of a preserved bean curd which can be preserved for a long time, has a firm texture and removed from beany smell. CONSTITUTION: The manufacturing device of a preserved bean curd comprises the parts of: a mixing container to prepare suspension of raw soybean powders by mixing soft water passing through a remover of remaining chlorine(10) and a UV sterilizer(20) with raw soybean powders; a steaming container(60) for steaming the suspension; a cooler(70) for cooling the steamed suspension to 10-15 deg.C or below; a mixing container(80) for mixing the cooled suspension and a liquid type of homogenized coagulant; a packing part(100) for filling the mixed suspension into a container; a stem-forming part for forming and sterilizing the packed suspension with steam; and a cooler for the steam-formed suspension to 20 deg. C or below. |
