PROBLEM TO BE SOLVED: To provide a new aminopeptidase useful for improving productivity and quality in seasoning production through the hydrolysis of proteins, and a gene encoding the enzyme. SOLUTION: An aminopeptidase containing a specific amino acid sequence, an aminopeptidase gene encoding the enzyme, a recombinant vector containing the gene, a transformant which has been transformed by the vector and a method for manufacturing an aminopeptidase by using the transformant. The aminopeptidase gene of the present invention can be obtained, for example, from an Aspergillus such as Aspergillus sojae or Aspergillus oryzae.
