PROBLEM TO BE SOLVED: To provide an apparatus for cluster fractionation, with which reduction in qualities of a food can be prevented and controlled. SOLUTION: This apparatus 1A for cluster fractionation has a magnetic field generator 2 for applying a magnetic field to an object 5 containing water and changing the strength of the magnetic field with time and a controller 3 for controlling the strength of the magnetic field generated from the magnetic field generator 2. The magnetic field generator 2 generates an alternating magnetic field. The magnetic field generator 2 is integrally formed with an energy application means 4 for irradiating the object with at least one of far-infrared radiation, ultrasonic waves and minus ion. Preferably the apparatus 1A for cluster fractionation is usable under a low-temperature environment while keeping the object 5 in cold storage or freezing it.
