PURPOSE: A process of preparing a freshness preserving material capable of preserving the freshness of Kimchi for a long period time using natural materials such as natural ore, oyster shells, shellfish shells, etc. is provided. Whereby, the taste and freshness of Kimchi can be maintained by culturing beneficial bacteria which kills harmful bacteria by manufacturing the freshness preserving materials. CONSTITUTION: Loess containing sericite is ground with elvan, jade, zeolite, oyster shells, shellfish shells and clean water in a ball mill, sintered to remove impurities such as fine irons, mercury, etc. and then reground in a wet ball mill to produce a mixture, which is mixed with a chitosan solution dissolved in citric acid and a sugar solution, and sintered to produce a sintered mixture containing 5 to 10% by weight of loess, 10 to 20% by weight of elvan, 5 to 10% by weight of jade, 10 to 10% by weight of zeolite, 5 to 15% by weight of sericite, 5 to 10% by weight of chitosan solution and 10 to 20% by weight of each oyster shells and shellfish shells, which is molded to a size of 30 to 50mm, sprayed with the chitosan solution and then dried.
