<p>PROBLEM TO BE SOLVED: To obtain Shochu (Japanese distilled liquor) excellent in quality of liquor by utilizing ionized alkaline water in the Shochu manufacturing process without inhibiting microorganismic action on the fermentation. SOLUTION: This Shochu utilizes the ionized alkaline water having pH at 8.0-9.5, preferably pH <=8.6 used in washing of material grains, soaking water, primary charging water, secondary charging water and diluting the undiluted Shochu.</p> |
