PROBLEM TO BE SOLVED: To provide a method for stably producing a refrigerated/frozen noodle keeping chewy 'al dente' state even after thawing by boiling and having excellent palatability to give the characteristic deliciousness of the flour to the palate and provide a refrigerated/frozen noodle produced by the method. SOLUTION: Noodle is subjected to pregelatinizing treatment to pregelatinize at least a part of the noodle and cooled with saline water having a prescribed concentration before the refrigeration or freezing of the partly pregelatinized noodle. The noodle is preferably pasta such as spaghetti. |
