PROBLEM TO BE SOLVED: To obtain a condensate containing substantial amounts of ursolic acid and oleanolic acid, or their salts permissible as foods, and capable of being used directly to a food. SOLUTION: The condensate contains substantial amounts of ursolic acid and an oleanolic acid derivative as follows: (i) >22 wt.%, preferably 30-65 wt.% of the total of ursolic acid and oleanolic acid, or their salts permissible as foods; (ii) <40 wt.%, preferably <25 wt.%, especially 1-10 wt.% of a sugar residue; (iii) the weight ratio of ursolic acid to oleanolic acid, or their weight ratio in their salts permissible as food, of >3.6, preferably 4.0-6.0; and (iv) the balance is a glyceride and/or other substances including triterpenes other than ursolic acid and oleanolic acid. |
