A trolley-charged bread baking oven has a baking chamber (1) with a wall (18), a gas (3) burner (16) and a heat exchanger to transfer heat from the gas into the oven chamber. The heat exchanger consists of esp. a curved flat heat exchanger wall (2) which separating a hot gas passage (2) from a hot air passage (4). The heat exchanger wall (2) is located parallel and at a pre-determined distance from baking chamber wall (18) and is outside the oven chamber (1). The baking chamber wall and heat exchanger wall have the approx. the same dimensions. The heat exchanger wall curves around the rear face of the baking chamber. The baking chamber wall planform is a regular curve.
