PROBLEM TO BE SOLVED: To provide an indicator substance for expressing freshness of royal jelly. SOLUTION: It is important to decide an indicator substance for expressing freshness, that is, a criterion of the degree of efficiency and deterioration of itself for every lot in royal jelly products to be compounded in a health food or the like. A protein having a molecular weight of about 350 kilodaltons in royal jelly is used as an indicator substance for freshness. The ratio of the protein in the whole proteins in royal jelly of >=35 wt.% indicates that the royal jelly is fresh.
