PURPOSE: Provided is a manufacturing method of pickled radish using a pear extract and a pear vinegar rather than a sweetening agent and a flavoring agent. Therefore, the pickled radish has characteristic flavor and taste of pears. CONSTITUTION: The manufacturing method of pickled radish comprises the steps of: salting a selected radish in a salting tank; desalting it in a desalting tank; and seasoning it in a seasoning tank and maturing it, wherein 0.1-0.3% of a pear extract and 0.05% of a pear vinegar referred to the weight of a conventional artificial seasoning agent(or sweetening agent) are added. |
