A method of preparing 2,6-dimethyl-4-oxo-heptanoic acid comprises oxidising dihydrotagetone. The dihydrotagetone may be isolated from a plant, the plant may be a Tagetes species. Tagetes minuta oil may be absorbed on an absorbent and the absorbent extracted with a cold non-polar solvent to remove the non-polar consituents and then with a warm non-polar solvent to produce dihydrotagetone. 2,6-Dimethyl-4-oxo-heptanoic acid may be used as a synthon in asymmetric synthesis. 2,6-Dimethyl-4-oxo-heptanoic acid or derivative thereof may be useful in the flavour, perfumery and/or pharmaceutical industries, particularly as a flavouring agent. Products comprising 2,6-dimethyl-4-oxo-heptanoic acid include a soft drink or alcoholic beverage formulation, a herbal formulation, a confectionary formulation or a tobacco product formulation. |
