PROBLEM TO BE SOLVED: To provide a method by which a Koji of good quality without being contaminated with various bacteria is obtained by suppressing the growth of the various bacteria to the least possible extent under mild conditions in a step of inoculating Koji molds into grains such as rice, barley or wheat or corn or beans such as soybeans, fermenting the grains or beans, saccharifying starch, hydrolyzing proteins and producing the Koji. SOLUTION: This method for producing the Koji comprises adding a lactic acid fermentation liquor or its dried material simultaneously with inoculation of the Koji molds and carrying out culturing or steaming a food composed of the grains or beans, then adding a germination inducer, preferably alanine simultaneously with the inoculation of the Koji molds or before or after the inoculation of the Koji molds and carrying out the culturing, adding the lactic acid fermentation liquor or its dried material subsequently to the germination inducer and carrying out culturing in a step of absorbing water in the food composed of the grains and beans, steaming the food, cooling the steamed food, then mixing Koji molds, carrying out the culturing and producing the Koji. |
