PROBLEM TO BE SOLVED: To improve the assimilating property of a microorganism to an oligosaccharide, especially maltose, in the production of a substance by fermentation with the microorganism using a carbon source containing glucose and oligosaccharide such as decomposed starch liquid. SOLUTION: A microorganism is cultured in a medium to produce and accumulate the objective substance in the medium and the substance is collected from the cultured product. The microorganism to be used in the above method for the microbial production of the objective substance is a mutant or a recombinant having maltose assimilability controllable by the interaction between IIAG protein of glucose PTS and a protein participating in the non-PTS uptake of maltose and having attenuated or disappeared interaction between IIAG protein and a protein participating in the non-PTS uptake of maltose.
