发明名称 METHOD FOR PRODUCING FROZEN FRIED RICE
摘要 PROBLEM TO BE SOLVED: To provide a method for producing frozen fried rice excellent in easiness of loosing rice, hardness and flavor through thawing and heating with e.g. microwave oven cook and enabling obtaining taste by fried cook. SOLUTION: This method for producing frozen fried rice comprises a process (A) of frying boiled and steamed nonglutinuous rice together with ingredient materials, oils and seasonings, a process (B) of supplying water by addition to the fried rice at a temperature of goods of >=60 deg.C and a process (C) of freezing the fried rice after being supplied with water; wherein the total moisture content ratio of all the materials to be used in the process (A) before being fried is 52-62 mass%, the process (A) of frying is done so as to bring the moisture content ratio of the whole fried rice obtained by the process (A) to 47-55 mass%, and supplying water by addition in the process (B) is done through adding water at <=10 mass% of the total weight of the fried rice so as to bring the moisture content ratio of the fried rice after frozen in the process (C) to 51-62 mass%.
