Prod. consists of a portion of cooked sausage meat paste, made with chitterlings, packed in an individual, air-tight packing comprising a dish made by pressing a thin Al sheet. The dish is covered with a sheet of heat-sealing plastic material which is pref. transparent. This new form of presentation of a well-known prod. is practical, low in cost, offers better hygienic protection and provides greater facilities for use. The paste consists of a mixt. in variable proportions, of colon and belly of pork, possibly with the addition of calf's mesentery, seasoned with spices and other additives. At least one of the constituents has previously been smoked. After pre-cooking, instead of filling the mixture into a sausage skin it is placed in an aluminium dish. The prod. can be heated or grilled after simply removing the plastic cover. |
