<p>Oven comprises superimposed cooking chambers arranged in two horizontal gps placed side by side with respect to the longitudinal axis of the hearth; each gp is heated by its own complex of annular tubes. The metallic hearth consists of a hollow cylinder of refractory steel; the annular steam tubes are of weldless stainless steel. They are of the type provided for high press. and have a high coefficient of elasticity, so that they can easily be formed into shape. The tubes contain a quantity of water amounting to 40% of the internal vol.; this is vaporised in the heated sections of the tubes to produce steam which circulates inside the tubes and transmits heat from the hearth to the cooking chambers. The arrangement of the heated sections of the tubes with respect to the hearth allows of the max. take up of the heat radiated by the external surface of the hearth and at the same time has a cooling effect on the latter which increases its life.</p> |
