PURPOSE: An antioxidant containing an alkali extract from a mixture of defatted rice bran and onion skin is provided, therefore the antioxidant has improved antioxidative activity and stability, so that it can be used as food additives. CONSTITUTION: The antioxidant containing an alkali extract from a mixture of defatted rice bran and onion skin is produced by extracting a mixture of defatted rice bran and onion skin using metal oxide or an alkali salt solution at 0 to 150 deg. C, in which the defatted rice bran and the onion skin are mixed in a weight ratio of 1:0.1 to 1:2, and used in the amount of 0.1 to 10 wt.%; the metal oxide is selected from the group consisting of magnesium oxide, calcium oxide, zinc oxide, aluminium oxide, manganese oxide and copper oxide; and the alkali salt is sodium hydroxide, kalium hydroxide, sodium carbonate, calcium hydroxide and magnesium hydroxide.
