Flavouring compositions for imparting umami taste to food products comprising Amadori and Heyns rearrangement products and/or N-Glycosides. Such compounds represent an alternative to monosodium glutamate in order to impart umami taste. N-(D-glucos-1-yl)-L-glutamic acid and salts thereof. Use of such compounds in food products.
