<p>It is intended to provide a novel process for producing isomaltose and use thereof. Namely, a process for producing isomaltose characterized by comprising treating a saccharide having α-1,4-glucosyl bond as the binding manner at the non-reducing end and having a degree of glucose polymerization of 2 or more with a-isomaltosyl glucosaccharide synthase in the absence or presence of a-isomaltosyl transferase to thereby synthesize α-isomaltosyl glucosacharide having α-1,6-glucosyl bond as the binding manner at the non-reducing end and α-1,4-glucosyl bond as the binding manner other than at the non-reducing end and having a degree of glucose polymerization of 3 or more and/or cyclo{→6)-α-D-glucopyranosyl-(1→3)-α-D-glucopyranosyl-(1→6)-α-D-glucopyranosyl-(1→3)-α-D-glucopyranosyl-(1→}, then treating the product(s) with isomaltose-releasing enzyme, and collecting the thus formed isomaltose.</p> |
