PURPOSE: A method of cooking functional rice served in soup(kukbap, Korean native name) by putting boiled rice into soup containing an extract of green tea, Acanthopanax sessiliflorus Seem. or Houttuynia cordata Thunb. instead of meat juice is provided. Whereby, the food contains a functional component with beneficial health properties while achieving the characteristic taste thereof. CONSTITUTION: About 3 to 40% by weight of an extract of green tea, Acanthopanax sessiliflorus Seem. or Houttuynia cordata Thunb. is mixed with 3 to 4% by weight of bean-paste soup and 2 to 3% by weight of Perilla japonica powder to produce functional soup, which is added with 20 to 25% by weight of boiled rice, 10 to 15% by weight of sliced meat, 5% by weight of spices containing green onion, garlic, red pepper paste, 2 to 3% by weight of bean sprouts, and 2% by weight of shredded green onion.
