PURPOSE: Provided is a manufacturing process of frank sausage using duck-meat, therefore everyone can take the frank sausage regardless places. CONSTITUTION: The manufacturing process of frank sausage using duck-meat comprises the steps of: selecting and thawing high quality of frozen duck meat to its surface temperature being 5 deg.C or less; finely cutting the thawed duck meat; mixing the prepared duck meat with quantified other ingredients in a mixer under vacuum condition at 10 deg.c or less for 1 minute; filling the mixture into a cellulose case; heat-treating it and taking the cellulose case off; and vacuum packing and disinfecting it at 85 deg.C. |
