The invention relates to a method for obtaining protein preparations with essentially constant properties with regard to application functionality, within a broad pH range of from about pH 3 to pH 10, by means of extraction from a protein-containing raw material, namely, leguminous plants, cereals o r oil seeds. The invention is characterised in that the protein-containing raw material undergoes at least one fluid extraction step and the raffinate and/ or extract thus obtained is either fed to a membrane separation process, whereb y a retained product is obtained or subjected to a thermal concentration, whereby a concentrate is obtained. The protein preparation with the desired functional properties is contained in the retained product or the concentrat e.
