<p>PROBLEM TO BE SOLVED: To provide a method for acquiring improved yeast for brewing use with a high glycerol productivity. SOLUTION: Yeast cells for brewage are proliferated in a synthetic medium containing at least 0.2mM palmitic acid plus linoleic acid followed by regulation so as to be >=8wt.% in the final ethanol concentration and then conducting a thermal shock treatment at 40-55 deg.C, thus, acquiring the objective yeast.</p> |
