Curds containing albmen are produced in a milk fermenter with albumen destabiliser and bacteria culture feed and passed to a coagulator with heating jacket. Channels running parallel inside the coagulator are elliptical and have straight line generatrics in the main axis of the ellipse running parallel in the channels. - The channel entries lie in a thermostat chamber which can be cooled with water to adjust the entry temperature. Height to width in the channels should be 1:3 to 1:12. Each channel can be heated by hot water to ensure uniform consistency of the product. - Flow is balanced out by means of the channel design, as well as uniform temperature effects and thus the consistency of the curd product.
