METHOD FOR SUPPRESSING beta-CRYSTALLIZATION OF FATTY ACID MONOGLYCERIDE AND EMULSIFIED COMPOSITION

PROBLEM TO BE SOLVED: To obtain an emulsified composition which can sufficiently suppress theβ-crystallization of a fatty acid monoglyceride and excels in not only an external appearance and a feeling of use but also emulsification stability. SOLUTION: A method for suppressing theβ-crystallization of the fatty acid monoglyceride comprises stirring and mixing a water-swelling clay mineral and the fatty acid monoglyceride to modify the water-swelling clay mineral with the fatty acid monoglyceride. The emulsified composition can be obtained by incorporating the water-swelling clay mineral and the fatty acid monoglyceride modified product obtained by mixing and modifying the water- swelling clay mineral with the fatty acid monoglyceride.
