Continuous production of cut pieces of confectionery involves mixing a confectionery composition (I) with a mixer, forming an over-width confectionery strip on an endless conveyor, passing the strip through a cooling tunnel and cutting lengthwise and crosswise. The edge strips (II) are recycled to the mixer and mixed with (I) and heated before mixing, all continuously. <??>An Independent claim is also included for the equipment used, which comprises a mixer, molding station, endless conveyor, cooling tunnel lengthwise and crosswise cutters, conveyor for recycling (II) to the mixer and heater for heating (II) before mixing with (I). |
