METHOD FOR PREPARATION OF PARTIALLY DEACETYLATED CHITIN BY ENZYMATIC METHOD

PROBLEM TO BE SOLVED: To develop a method for N-acetylation of a chitosan based polymer material extremely suppressing use of an organic solvent, without causing an O-acetylation which is a side reaction and to establish an effective synthetic method for the partially deacetylated chitin represented by a water-soluble chitin. SOLUTION: This method for preparing the partially deacetylated chitin makes a N-deacetylating enzyme to act on the dissolved or swollen chitosan based polymer material under an acidic condition.
